"Sunday Dinner"

Easy BBQ Chicken
Ingredients:
4 large boneless skinless chicken breast
1 bottle of your favorite BBQ sauce
1 can of cola

Directions:
Cut each breast in half. In a largre bowl pour in BBQ sauce and pour your cola into the bottle about half way full. Shake gently with the lid on the bottle. This will also help get more of the sauce out of the bottle. Pour into the bowl and stir the two together . Gently place your chicken breasts into the bowl and immerse them in the sauce. You can let this set in the fridge for an hour or immediately cook it. In a large sauce pan or skillet, pour in the entire bowl. Cook on a medium high heat to start to get the chicken cooked, then reduce heat, cover and turn chickn every 5- 10 minutes. Until chicken is completely cooked through and tender. The sauce will thicken up and create a nice, sweet sauce.

Scalloped Potatoes
Ingredients:
10 potatoes peeled and sliced thin
2 T butter
2 T flour
2 cups milk
3 cups velveeta cheese - cubed
1 cup french fried oninon rings
Salt and pepper to taste

Directions:
Place potatoes in a layer in casserole dish. Season with salt and pepper.Make sauce by melting butter in a sauce pan. Then stir in flour until it’s smooth. Add the milk and bring to a gentle boil, then add in your cheese. Stir until the cheese has melted. Cover the first layer of potates with some of the sauce. Add another layer of potates and add some more sauce. Add one final layer of potatoes and sauce then sprinkle french fried onions on top. Bake in a 375 degree oven for 45 minutes covered. Then remove cover and bake an additional 15 mnutes.


Fried Okra
Ingredients:
1 quart of sliced fresh okra (frozen will work too)
1 cup of corn meal
Cooking oil
Salt and pepper to taste

Directions:
Coat okra with corn meal and salt and pepper. Pour oil into an iron skillet about ½ way up. Heat the oil. Place one or two slices of okra in oil and when it starts to sizzle, add the rest of the okra. Let it sit for at least 5 minutes before turning it. Turn only a few times total. It’s best if you don’t keep "messing with it" as my momma used to say! Once it has turned golden brown, lift out with a slotted spoon onto a paper towel lined plate or bowl. This will help to absorb a lot of the oil.

Chocolate Pie

Ingredients:
1- 9 inch pie crust
6 T cocoa
3 eggs – separate yolks from whites
½ cup flour or conrstarch
1 cup sugar
2 T butter
2 Cups milk
1 tsp vanilla
¼ tsp salt

Directions:
Bake pie shell in oven according to packagae directions. (Before baking it's a good idea to brush it with a beaten egg. This will help keep your crust from becoming soggy.) Set aside while prepring filling. In a large skillet, combine sugar, flour, cocoa and salt. Gradually stir in milk. Cook and stir over medium heat until bubbly. Then cook and stir for 2 minutes. Remove from the heat and put in a small amount of hot mixture into egg yolks and then pour entire egg mixture to the skillet. Cook 2 more minutes stirring constatnly. Remove from heat and add butter and vanilla. Pour this mixture into your prepared pie crust. Mixture should be thick.
For meringue:
3 egg white
6 T sugar
¼ tsp. cream of tartar
½ tsp. vanilla

Instructions:
Beat egg whites, vanilla, and cream of tartart until soft peaks form. Gradually add sugar until stiff and glossy. Spread onto pie. Be sure to touch the rim of the crust with meringue as it will shrink back during baking. Bake at 350 degrees for 12-15 minutes. Keep an eye on it so the meringue doesn’t burn.

Tried the BBQ chicken but tried it in the slow cooker. Also I only had a cherry flavored cola. Yuk. The sauce never thickened in the slow cooker and I won't try the cherry flavored cola either. I dumped the sauce and put the chicken on a foil lined baking sheet and brushed on a sweet and spicy bbq sauce. I put it in the oven for 15 min., turned a reapplied the sauce and baked it another 10 min. It was sticky and oh so good. My husband just loved it. I used thighs and legs as they were on sale that week and I bought a big bag. He ate the whole bag except one thigh and one leg. You can bet that I will be making this again but I will follow the recipe the next time.
I just bought the ing. for the potatoes and will be making that tonight to take to a church function. It looked so good. Thanks. Dee
