Chocolate Raspberry Truffles
Ingredients:
3 cups chocolate chips divided
2 T whipping cream
1 T butter
2 T seedless raspberry jam
Directions:
Combine 1 ½ cups chocolate chips whipping cream and butter in a double boiler over low heat.; stir until melted and smooth. Add raspberry jam; remove from heat and cool. Cover with plastic wrap and freeze for 20 minutes. Shape into one inch balls and freeze until firm. Melt remaining 1 ½ cups chocolate chips in a double boiler over low heat; using a toothpick, dip balls into melted chocolate. Place on wire racks; chill until set. Makes about 3 dozen.
Ingredients:
1 roll of sugar cookie dough
sliced almonds
1 egg white
Directions:
Divide dough in half. Shape each portion into a 1 inch thick disk. Heat oven to 350 degrees. Have ready a 2 ½ inch heart shaped cookie cutter. On lightly floured wax paper with light floured rolling in, roll 1 disk to 1/8 inch thick. Cut out hearts with cookie cutter. Slide paper onto a baking sheet; freeze 5-10 minutes until firm and easy to handle. Peel hearts off paper. Place 1 inch apart on ungreased baking sheet. Cut a 1 ½ inch long slit at bottom of hearts. Spread apart slightly to form wings. Brush hearts with egg white. Attach almonds as down each side of wing pressing down gently. Sprinkle with a little sugar. Bake 8-10 minutes until just golden
Pecan and Cashew Turtles
Ingredients:
2 ½ cups pecan halves and cashews
1 bag of caramel squares
2T heavy cream
1 ½ cup semi sweet chocolate chips, melted
Directions:
On a baking sheet or wax paper lightly greased, arrange pecans in sets of 3, laying 2 end to end and one across the top; or cashews in a small cluster, set aside. Melt caramels and butter in a heavy saucepan over medium high heat, stirring constantly until mixture melts and is creamy. Spoon about 1 T caramel over each set of pecans; cool. Spoon 1 tsp melted chocolate over each. Let stand to harden. Makes 3 dozen.
Savory Santa Snack Mix
2c crispy corn cereal
2 c crispy wheat cereal
2 c crispy rice cereal
2 c doughnut shaped oat cereal
1 c pretzel sticks
1 c halved pecans
6 T butter, melted
4 T Worcestershire sauce
1 ½ t. seasoned salt
¾ t garlic powder
½ t onion powder
Directions:
In a gallon plastic resealable bag, mix together cereals, pretzels, and pecans. To your melted butter add Worcestershire sauce and seasonings; stir to mix. Pour wet ingredients in plastic bag, secure bag and shake to coat. Spoon mix onto a baking sheet and bake at 250 degrees for one hour, stirring every 15 minutes. Cool and store in an airtight container. Makes 10

Directions:
Melt chocolate in a heavy saucepan over low heat or in the microwave. Dip flat sides of half cookies in white chocolate or spread with an off set spatula, and top with flat sides of remaining cookies. Let stand until white chocolate is firm. Then roll in powdered sugar. Yum Yum!!!
