"Romantic Rendezvous"

Salmon with Herb and Wine Sauce

Ingredients:
4 medium size salmon fillets.
1 garlic clove, crushed and minced.
½ cup of dry white wine.
6 tablespoons of butter
2 tablespoons of bacon drippings
2 tablespoons of lemon juice
1 teaspoon of whole basil
½ teaspoon of oregano leaves
½ teaspoon of thyme leaves


Directions:
Using a suitably sized frying pan, slowly cook enough bacon, (about a half a pack) to provide 2 tablespoons of drippings.Remove the bacon and leave the drippings in the pan.Sauté the fish in the drippings over a medium heat, turning gently.once. Don't cook the salmon all the way through.Place the salmon in a baking dish and keep warm. Deglaze the pan with some of the wine and scrape the residue from the pan and pour over the fish. In a saucepan, melt the butter and add the crushed garlic, basil, oregano and thyme. Cook this over a low-to-medium heat, for about 3 minutes; stirring occasionally. Remove from the heat and add the lemon juice and white wine. Pour this sauce over top of the salmon. Place in the oven and bake at 400°F for about 10-12 minutes.

Nutty, Buttery Orzo

Ingredients:
2 cups uncooked orzo (follow package directions)
1/2 cup pine nuts
2 tablespoon butter
3 tablespoon lemon juice
2 tablespoon olive oil
parsley - dry or fresh -is optional

Directions:
Once the orzo has cooked completely - about 6-7 minutes - drain in a colander then mix all of your ingredients together.

Lemony Sautéed Asparagus

Ingredients:
1 pound of Asparagus
3 tb melted butter
1/4 cup white wine
1 tb lemon juice

Directions:
Melt butter in a skillet or sauté pan. Add wine and lemon and asparagus and let cook on low for about 15 minutes.

Heart Shaped Red Velvet Cookies

Ingredients:
1 box of Red Velvet Cake Mix
2 eggs
1/3 cup vegetable oil
Flour or Cocoa for rolling out dough
Heart shaped cookie cutter
1 can of creme cheese frosting

Directions:
Mix cake mix, eggs and oil in a mixer till a stiff dough forms. Spread out your work surface with flour or coca or a combination of both as well as your rolling pin. This dough will be quite sticky and you will need enough flour to prevent your dough from sticking to the surface. Roll out the dough and cut out cookies with heart shaped cookie cutter. Place each cookie on a lightly greased cookie sheet and bake in a 350 degree oven for 10-12 minutes. Allow cookies to cool before icing with cream cheese frosting. Make special designs or sandwich two cookies together with the icing in the middle. For a more southern touch, mix up some chopped pecans in the frosting. That's my favorite way to make these!

Sinfully Rich Chocolate Martini

Ingredients:
2 ounces of Godiva Dark Chocolate liqueur
2 ounces of Creme de Cacao
2 ounces of vodka
1 ounce of half-and-half
Good quality chocolate candy bar
Ice

Directions:
To decorate your martini glass, pour just a little of your vodka into a plate. Grind up your chocolate candy bar in a grinder or food processor until it becomes very fine. Spread this mixture onto a separate plate. Dip the rim of your glass in the vodka first, then into the ground chocolate. For the martini, place ice in your shaker or pitcher then pour in the remaining ingredients. Shake well and then pour into your lovely decorated glass. You can even sprinkle some shaved white chocolate on top! Share
